I tried two recipes from our free ITN Community Cookbook that is available to you to download on my homepage. I tried the Chicken Thigh recipe which was very good. I added some garlic powder and next time I might add a little more seasoning. The chicken was cooked perfectly and had a crispy top, which was nice.
I also tried the Quinoa Confetti Salad. It was delicious! I loved the flavors and the balsamic vinegar was a perfect touch. I forgot to add the avocado at the end, but that’s okay because today I had leftovers for lunch and the avocado may have turned brown. I put the Quinoa Confetti Salad over a mix of spring greens and spinach. Then I added the avocado. The salad was even better today! I highly recommend it and what a great way to get in some vegetable servings!
